Chilli Garlic Prawns

Prawns work pretty much with most ingredients and simpler the recipe, the more the sweet taste of the prawns shine through  

I was quality testing a new grade of prawns we were sourcing for Fishvish and well… I had use it up – cant re-freeze thawed out prawns can I? I had only thawed out 250 gms of the entire Kg and figured the quick and simple would be a stir fry.

Chilli Garlic Prawns it was. It’s not a “classic” chilli garlic I suppose but it was absolutely smashing! Here’s what I did.

Once completely thawed (I used method 2), the prawns were patted dry with a kitchen towel and then marinated for 10 mins in a mixture of a pinch of black pepper, 1/2 teaspoon of red chilli powder, juice of 1 lemon and some salt.

On high heat a medium sized onion chopped very fine was sauteed till translucent in about 2 tablespoons of groundnut oil. Added in 6 cloves of finely chopped  fresh garlic and sauteed for about 30 seconds. Then added in the marinated prawns and cooked them for about 1 minute on one side and then flipped them using tongs and cooked on the other side for another minute.

And Voila! They were done.
